Fried potatoes are traditionally fried in oil rather than margarine. Oil has a higher smoke point than margarine, making it more suitable for frying at high temperatures without burning. Additionally, oil imparts a neutral flavor to the potatoes, allowing their natural taste to shine through. Overall, using oil is the preferred method for frying potatoes to achieve a crispy and delicious result. **

However, it's important to note that not all foods are suitable for frying, as some may become too greasy or lose their texture. **

Once fried, remove the eggplant slices from the oil and place them on a paper towel to drain any excess oil before serving. **
